     It’s so true that the power lies within you.  You can choose joy.  You can choose nourishing food.  You can choose fitness. YOU & only you can choose whatever it is you want … you are the keeper of your own life.

    I personally choose a diet high in raw & living foods, yoga, family, laughter, time outside in nature, time with people that lift me up.   I choose joy & peace.  What do you choose?

    The power is in you.  This is a powerful message and one that we can often forget as we get sucked into the drama of our everyday lives.  So for those of you in the greater Portland area, I’d love to invite you to join me at the Bay Club on Saturday from 9-4:30 for a day of love, nourishment & self-discovery.  You can participate in many different mini-workshops, including massage, reiki, zumba, yoga, breathing, body composition analysis, raw food with yours truly & so much MORE!  And lunch is included.  You can check out the details & register by CLICKING HERE.

    Kick the Dairy Habit!

    I was a cheese and yogurt junkie.  I ate cheese and yogurt every single day for years and years and absolutely loved them.  When I first entertained the thought of going vegan, I thought there is no way I can give up my cheese and yogurt long term.  So when I set out on my vegan adventure, I took it one day at a time and you know what, I did not miss dairy at all!  In fact, I felt better than I had in a long, long time!  I had a debilitating menstrual cycle and would pop 12 advil a day, 3 days a month, just to make it through.  Almost immediately after giving up dairy, I was able to breeze through my menstrual cycle without ANY advil.  I gained 3 days of my life back each month.  That’s HUGE!  I had no idea how much dairy was messing with my body.

    When you really think about milk and its purpose, you wonder how on earth we actually began to drink it.  Cows produce milk for their babies … it is the equivalent of breast feeding.  Calves drink their mamas milk and grow from approximately 70-100 pounds at birth to about 500-700 pounds at 10 months.  WOW, huh?!  Moooooooo!  Cow’s milk makes calves grow like crazy.  Do you want to grow like crazy?  🙂   It’s pretty simple when you think about it … human milk is for humans & cow milk is for cows.

    As a former dairy addict, I am happy to report that I love my nut and seed milks, my homemade coconut milk, nogurts, dips, spreads, cheezes, nice creams, puddings & cheeze cakes!  I make all of these things from “scratch” in my kitchen & I wouldn’t trade them for anything.  Whole foods, plant-based dairy alternatives are RAWsome!  My body thanks me and I think the cows do too.

    Walnut Pesto … YUMMMM!

    Summer is bursting with flavor & I thought I’d whip up some pesto to share with you.  It tastes divine on a slice of heirloom tomato!

    Walnut Pesto

    4 cups fresh basil

    1 cup walnuts

    1/4 cup olive  oil

    1/4 tsp sea salt or to taste

    1/4 cup sundried tomatoes, soaked in water for 1 hour & drained – optional

    Place all ingredients in the food processor & pulse chop until your desired consistency is achieved.  SO GOOD!  🙂

    You can use it as a dip for veggies or on raw bread or crawkers or thinned out as a salad dressing. ENJOY!

    Juice Feasting … NOW is the time!

    Have you been curious about trying a juice feast/fast?  

    Well NOW is the time!  With local produce in full bloom & warm weather

    to help us want lighter, fresher food, the timing couldn’t be better.

    What is a juice feast & why do it?

    A juice feast is when you consume 4-6 quarts of fresh juice a day for a period of time, without eating any food.  It is safe for healthy folks to juice feast for 1-10 days, and if you are interested in going longer, you might want to consult with your doctor.  Some people have juice feasted for as long as 90 days. Any day you enjoy fresh juice is a good day!

    Why juice?  Juice feasting is a great way to give your body a break … a break from digesting food, which requires a lot of energy!  Completing a juice feast lets you load up on the incredible nutrients found in fresh produce and is a great way to reset & eliminate cravings.  You will feel brighter, clearer, lighter, more energetic & happy!  Juicing is also known to help people heal from numerous illnesses & diseases.  Fresh juice packs a serious punch of nutrients!

    Vegan Mashup: Help Make a Season 2

         It’s so important to share the joy of vegan living because our world is crumbling with all kinds of environmental & health problems that stem from the way we as a country farm (factory farming/big agriculture) and how we eat.  
           Learning about and sharing vegan cuisine changes lives and makes the world a better place, which is why I believe so strongly in my friend Betsy’s TV series, “Vegan Mashup.”
         Vegan Mashup is a fabulous cooking series that aired six very well received episodes this spring on 75% of American public television stations – this is a potential audience of 88 million people!  
           And I was honored to be a guest chef on episode #106 “A Reason to Rise” … I got to share a simple & rawlicious almond milk recipe & a green smoothie recipe.  SO FUN!  You can order a copy of the dvd here.
